At least the bananas help with your daily fruit servings!
Ingredients:
2-3 ripe bananas mashed
Small can of crushed pineapple (drained)
2 eggs
1 stick of butter softened
1 cup brown sugar
1 tsp. vanilla
2 Tbsp. cinnamon
1/4 cup of oatmeal/muesli
1 1/2 cups of whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
Optional: 1/4 cup of chocolate chips/nuts/coconut
Combine ingredients and bake at 350 for 45 minutes. At the end, I turn off the oven and crack it, but leave the bread in there for another hour to set and stay warm. It’s so good and moist, I end up trying to give some away so I won’t sit around and eat it all myself!
